When I think about red, I think about the simple pleasures of eating tomato rice. I just made tomato rice this week after learning about this recipe.
Blend the tomatoes until smooth and set aside. In a heavy-bottomed pan, heat some oil and add mustard seeds. Once they start to pop, toss in dried red chilies, chana dal, roasted peanuts, curry leaves, and cumin seeds.
Add a small handful of chopped onions and sauté until golden brown. Stir in the blended tomatoes along with a pinch of turmeric and salt. Cook the mixture down until all the moisture evaporates and it reaches a thick, jammy thokku consistency.
Finish with chopped coriander leaves, mix it into freshly cooked rice, and enjoy a bold, tangy tomato rice that’s packed with flavor!
