Shweta SenthilHere is how I prepare Carrot Halwa in my house
Peel and grate carrots using a fine grater. In a deep non-stick pan, add grated carrots and milk.Cook on medium heat, stirring often, until the milk reduces and the carrots soften.Stir in sugar. The mixture will loosen—cook until it thickens again. Add crushed cardamom. The mixture should thicken and most of the milk should be absorbed. Pour in ghee and cook until the halwa becomes glossy and aromatic. I dont like to add cashew nuts to this but if you like them you can toast them in ghee and then add it to the halwa. Try it and let us know how it tastes.
